YUMMY VEGGIES ON THE BBQ IDEAS.

Whether you are a vegetarian, trying to eat healthy or just love veggies, the EZ Grill is an easy solution to add some great flavor.  Here are some ideas for your Winter grilling.

What Garden Vegetables are Suitable for Grilling?
I'm sure there's a long list of things that creative gardeners have cooked on the grill, but the three garden vegetables I think are most suitable for grilling are green or yellow summer squash, eggplant, and winter squash. These vegetables are big enough to grill in slices, and all taste great with a bit of charred flavor from the grill. Until a few years ago, zucchini was the one vegetable I grilled most, but then I tried grilled eggplant and grilled butternut squash and now I'm sold on cooking those on the grill too.

Ideas for Grilled Zucchini or Summer Squash
For an easy recipe to get you started, Life's Ambrosia has a basic recipe for Grilled Zucchini seasoned with a purchased spice blend. Another recipe that looks easy but tasty is the Grilled Zucchini, Yellow Squash, and Onions from The W.H.O.L.E. Gang. If you have a little more time, This Mama Cooks has Grilled Zucchini and Yellow Squash with Sun-Dried Tomato Pesto. I also like the Spicy-Sweet Grilled Summer Squash from Seasonal Eats. For two more ideas I think sound interesting, Rice and Beans in D.C. turns the grilled zucchini into Grilled Zucchini Wraps with Pineapple and Smoked Paprika and Fab Frugal Food makes drool-worthy Lemony Zucchini Roll-Ups

Ideas for Grilled Eggplant
I think eggplant has a natural affinity to garlic, and the Grilled Chinese Eggplant with Ginger and Garlic Sauce from Andrea's Recipes sounds like a recipe I'd love. Ditto for the Grilled Baby Eggplant with Korean Barbecue Sauce from Fat Free Vegan Kitchen or the Grilled Eggplant with Tahini-Yoghurt Dressing from Morsels and Musings. Buff Chickpea has Grilled Eggplant Parmesan that looks intriguing. If you want to impress guests, the Grilled Eggplant and Goat's Cheese Towers from Closet Cooking should do the trick. Finally, the recipe that turned me from slightly eggplant-resistant to a complete eggplant fan was Spicy Grilled Eggplant with Red Pepper, Parsley, and Mint (pictured above.)

Ideas for Grilled Winter Squash
In Europe all winter squashes are called pumpkin, so let's start with the absolutely delightful looking Sweet and Sour Grilled Pumpkin from Pinch My Salt (pictured above). At Lucullian Delights, Ilva uses a stovetop grill for her Grilled Winter Squash and Pancetta Salad. Dawn has a good idea at Dawn's Recipes, roasting squash in a pan on the grill for Grill-Roasted Butternut Squash. At Serious Eats, Joshua grills half a squash for his take on Grilled Acorn Squash with Asiago and Sage. Finally, at Herivoracious, the Achiote-Rubbed Butternut Squash Tacos may be the most unique recipe I've seen for grilled winter squash.

Grilling is not only easy, it's a great way to entertain in the summer, makes food taste great - and offers plenty of health benefits.
Grilling reduces the hidden fat in meats and makes it easier to fix vegetables that the whole family will enjoy. Compliment grilled foods with heart-healthy sliced tomatoes, watermelon and other summer fruits and salads. Add extra flavor, but not extra fat, by using dry rub spices for meats or chicken, an Italian dressing marinade for meat, or peppers or mesquite wood chips with fish.

If you grill often, here's how to do it safely.

It's important to know that cooking "muscle meat" foods such as chicken and beef at very high heat produces HCAs or heterocyclic amines. Shorter times at high heat reduce HCAs. Other grilling byproducts are PAHs (polycyclic aromatic hydrocarbon) residues. Dripping fat from meat or chicken over lapping flames can cause PAH residues on the food. Both HCAs and PAHs are thought to be cancer-promoting substances; but both can be reduced with a few simple adjustments: 
  • Grill vegetables more often, or along with meats like beef, chicken or fish.
  • To limit HCAs, use smaller cuts of muscle meats so they cook quickly (think kebabs & fish). Large cuts of meat can be partially pre-cooked in the oven or stovetop and just finished on the grill.
  • The American Institute for Cancer Research suggests that marinating meats before grilling may reduce HCAs by as much as 90 percent.
  •  Trim the fat and place the meat or chicken away from the highest flames; this reduces PAHs. Too much fire lapping up and charring cooking meat isn't good.
  • Food safety: keep the potato salad, hamburger patties; chicken and fresh fish cool until time to grill or eat. Summer heat helps bacteria grow and multiply. Keep outdoor food cool until time to prepare or eat.
  •   Avoid eating blackened or charred food.

Grilling - All Year Long

Traditional BBQ cooking is often at a lower temperature than high-heat grilling.

Try-It-Out Tuesday: EZ Grill

 
Tailgate season is here and the EZ Grill promises to be a portable, disposable way to barbecue anywhere.  But do its claims flame out?  We put it to the test for this week's Try-It-Out Tuesday.

The EZ Grill is easy to use, just find a non-flammable, solid base.  We tried it out on a sidewalk.  All you do is put it on the stand, light the starter sheet, and wait for the flames to turn the charcoal into ash.  Then you cook your meat like you would on any other grill.  In 20 minutes, we had perfectly cooked burgers.

Our testers passed the EZ Grill with flying colors, though flames do shoot out, so it can't be used on grass, ruling out some tailgate spots.

The grill comes in two sizes.  You can get two of the disposable larger grills for $19.99 or four of the smaller ones for the same prices.  You can find them at bigg's and online.

As always, this is an unscientific test, with unscientific results.

Tis the season for grilling

By looking at the photos below, I'm sure you can tell that it was cold outside. Just in case your wondering, I'm wearing 3 shirts, a coat, scarf, hat, hoodie, and gloves. I'm also packed with hand and foot warmers. Brrr!

The cold doesn't stop me, and the cold is surely not a reason to stop busting out the grill. I have been recently working promotional events for the Ez Grill, which is a disposable grill. The photos are from the Northwestern vs. Penn State football game in Illinois. Our tent was set up right outside the gates.

During this promotion I informed tailgaters about the Ez Grille and passed out literature. The Ez Grill team & I also demonstrated the grill by cooking hot dogs and giving them out for free!

GRILLING FRUIT YEAR ROUND - Why Not??

If you're looking for a different way to eat fruit, why not grill it?

We all know that fruit is part of a healthy diet, but sometimes we don't eat enough of it. Fresh fruit reposes in a bowl on our kitchen counter and goes bad before we eat it. Cans of fruit set in our kitchen cupboards or pantry untouched. We know we should eat fruit, but we don't always do it.
Grilling fruit changes up the flavors and textures, giving you a new way to enjoy a tasty, healthy food. In warmer months you can use an outdoors grill, and in cold weather you can use an outdoor grill. Yes, I know, some people use an outdoor grill even when the snow is flying, but for those of us who prefer to stay warm, try something like using a George Foreman grill in your kitchen.
Naturally, the fruit will have different flavors depending on how you grill it. For instance, charcoal or wood briquettes impart a smoky flavor of their own to the fruit.

Uses For Grilled Fruit
You can eat grilled fruit by itself as a snack, a side dish or dessert.  It makes a nice addition to any meal. It goes great cut up and added to salads. Grilled fruits are nice in rice pudding and custards. They pair well with ice cream, and can be included in a fruit sauce to pour over cakes or pancakes.
There are all kinds of ways to use grilled fruit. Just about anyway you would use canned fruit will work with grilled fruit, and many ways you would use fresh fruit work too.

Ways Of Grilling Fruit
Most any kind of fruit can be grilled, such as apples, bananas, figs, papaya, peaches, pineapple and plums. Choose fruit that is ripe but still rather firm. This helps keep it from falling apart while being grilled.
Fruit can be split in half for grilling, or for more even cooking, cut the fruit into slices of fairly equal thickness. Sometimes it works better to cut the fruit in slices from top to bottom, such as when grilling pears.

Fruit should be brushed with melted butter or oil before being placed on the grill to prevent it from sticking. Some flavored oils pair well with fruit and produce a unique taste treat.
Once you've placed the fruit on a clean grill, don't wander off. Most fruit has a high sugar content that will cause it to char quickly. It only takes 2 to 5 minutes to cook fruit, depending on the heat of the grill and the thickness of the fruit.

Try This Simple Recipe for Grilled Apples
Cut an apples into slices about 1/4 to 1/2" inch thick, cutting cross-wise.
Brush the apple with butter on both sides.
Sprinkle the slices with a little cinnamon and sugar, then grill the apple until tender.

Savor The Flavor Year Round!
However you decide to try grilling fruit, whether indoors or outdoors, it's a good way to enjoy the healthy benefits of fruit year round.
